Yame Ceremonial Grade Hiire Matcha
八女 火入れ 抹茶
Ceramic Stone-Ground Kirari 31 · Okumidori Blend
This matcha from Yame is crafted from a blend of Kirari 31 and Okumidori, two cultivars chosen for their balance of aroma, depth, and smoothness. Unlike matcha that focuses only on a bright green appearance, this tea highlights a more aromatic style shaped by hiire, the Japanese finishing process where carefully applied heat develops fragrance, stability, and depth.
The result is a matcha with a bold roasted aroma, warm fire-like fragrance, and a rich, satisfying flavor. When whisked, the cup opens with notes of toasted greens, roasted grain, gentle nuttiness, and deep savory umami. The finish is smooth and lingering, with the comforting aroma of the firing process remaining beautifully in the aftertaste.
Kirari 31 brings brightness, fragrance, and a clean finish to the blend. Okumidori adds body, smoothness, and deep green tea richness. Together, they create a matcha that feels full and expressive without becoming harsh. Kirari 31 gives the cup lift and aroma, while Okumidori gives it roundness and depth.
This matcha is produced in Yame, one of Japan’s most respected tea regions, known for rich, elegant green teas with deep flavor and refined character. In this expression, Yame’s craftsmanship comes through not only in umami and smoothness, but also in the careful use of heat to create a distinctive roasted fragrance.
This matcha is ceramic stone-ground, giving it a traditional, carefully milled texture. It is not ground to an extremely ultra-fine powder, so you may notice a slightly coarser feel compared with some very fine ceremonial matcha. This is normal for this style and does not mean the matcha is low quality. We recommend sifting before preparation for the smoothest bowl.
Because this matcha receives a stronger hiire finishing, the color may appear slightly less vivid than very bright green matcha powders. This slight discoloration is natural and reflects the more aromatic firing style. What it offers in return is a deeper aroma, richer body, and a memorable roasted character that makes this matcha stand apart.
Yame Ceremonial Grade Hiire Matcha is ideal for those who enjoy matcha with more warmth, depth, and aromatic presence. It can be prepared traditionally as usucha, served over ice, or used for a rich matcha latte where the roasted fragrance remains bold and expressive.
How to Prepare
Usucha / Traditional Matcha
2g matcha | 60–70ml water | 175°F / 80°C
Sift matcha into a bowl. Add water and whisk briskly until smooth and lightly foamy.
Iced Matcha
2g matcha | 50ml water | Pour over ice
Whisk with warm water first, then pour over ice for a refreshing iced matcha with a deep roasted aroma.
Matcha Latte
2.5–3g matcha | 50ml water | 180–220ml milk
Whisk matcha with water into a smooth concentrate, then add milk of choice. This matcha works especially well as a latte because the roasted aroma remains rich and fragrant even with milk.
Notes: Fire Aroma, Roasted Greens, Toasted Grain, Gentle Nuttiness, Rich Umami, Smooth Deep Finish
