This tea is available in two seasonal harvests. Select either Spring Harvest or Winter Harvest from the options above.

Spring Harvest: Fuller, more structured, and flavor-forward, with notes of apple, wildflowers, baking spice, and clean minerality.

Winter Harvest: Softer, creamier, and more aromatic, with notes of sweet potato, dried wildflowers, sweet cream, and subtle minerality.

About Datong

Datong (大同) is one of Taiwan’s lesser-known but highly respected high mountain tea regions. Located in Yilan County in northeastern Taiwan, it produces a style of high mountain oolong that feels distinct from teas grown in more famous regions such as Alishan or Lishan.

The tea gardens sit approximately 1,000–1,700 meters above sea level, where cool temperatures, mountain fog, clean water, and constant moisture slow the growth of the tea plants. This slower growth gives the tender leaves more time to develop sweetness, aroma, and complexity.

Because Datong is located closer to the Pacific Ocean, its gardens receive a unique combination of coastal fog and mountain air. The resulting tea has a clean, bright, and lively character, along with the smooth, silky texture associated with Taiwanese high mountain oolong.

This tea is organically grown in gardens surrounded by native forest, mountain vegetation, and a diverse natural ecosystem. Organic cultivation at this elevation is challenging and labor-intensive, but it produces a tea that feels especially clean, airy, balanced, and expressive of its mountain origin.

Spring Harvest

Spring tea is prized for its depth, structure, sweetness, and concentrated flavor. After resting during winter dormancy, the tea plants draw from stored nutrients to produce tender leaves with a fuller and more complex character.

The aroma opens with butter-sautéed apples and soft florals, followed by fresh wildflower and green notes. The texture is silky, gliding smoothly down the throat.

Subtle baking spices add warmth, while clean minerality brings clarity and complexity. A sweet, soft apple-like aftertaste lingers before finishing with an airy, cooling, and refreshing sensation.

It is almost like taking apple pie filling and transforming it into something light, elegant, and refreshing.

Winter Harvest

Winter tea grows during Taiwan’s cooler season, developing a softer, more elegant character with heightened fragrance and a creamier texture.

The aroma opens with sweet pumpkin, butter, and fresh cream. In the cup, flavors reminiscent of sweet potato are supported by a creamy sweetness that gently coats the palate.

Subtle minerality runs beneath the tea, giving the sweetness dimension and preventing it from feeling heavy. Soft floral notes emerge in the aftertaste, reminiscent of dried wildflowers and dried roses.

The finish is clean, airy, and lingering—the signature sensation that makes high mountain oolong so beloved.

While the Spring Harvest resembles airy apple pie filling transformed into tea, the Winter Harvest is more like creamy sweet potato pie filling reimagined as an elegant high mountain oolong. It is softer, creamier, and more aromatic while still carrying Datong’s refreshing mountain character.

Gongfu Brewing

Use 5 grams of tea leaves in a 90–100 ml gaiwan or teapot with 200°F water.

Give the leaves a quick rinse.

1st infusion: 25–30 seconds
2nd infusion: 10–15 seconds
Following infusions: Add approximately 2–3 seconds each time

The Spring Harvest will comfortably develop across approximately 8–10 infusions. Expect around 8 flavorful infusions from the Winter Harvest.

Be careful not to over-steep. High mountain oolong is meant to showcase elegance, fragrance, texture, and a clean, airy character rather than sheer intensity.
