How to Brew (Gongfu Style)
• Tea-to-water ratio: 4 grams of tea for a 90–100ml gaiwan or small teapot
• Water temperature: 205°F (96°C)
• First Rinse: Quickly rinse the leaves with hot water to awaken the aroma
• First infusion: infuse for 20-22 seconds before pouring
• Next 4–5 infusions: Just steep for 5–7 seconds each
• From the 6th on: Add 3-5 seconds per additional infusion to get more brews
Expect at least 10-12 brews for this long lasting, premium tea. When accidentally over-brewed,m the tea becomes slightly more dry but does not get bitter, making it a rather forgiving tea.
