Place an appropriate amount of tea leaves into the roaster and heat it over a low gas flame. Once the tea leaves begin to move, gently shake the roaster.

As the tea roasts, smoke will begin to rise and the leaves will gradually turn to your preferred color. Remove it from the heat when the desired roast is reached and allow the tea to cool before using.

This simple roasting process brings out the tea’s rich aroma and flavor, allowing you to enjoy freshly roasted tea made to your own taste.

This roaster can also be conveniently used for roasting sesame seeds, salt, arare rice crackers, beans, and ginkgo nuts.

How to Use a Houjiki:
  1. Preheat: Place the empty ceramic vessel directly over a low-to-medium flame on a gas stovetop or burner to heat it up gently. 
  2. Add Leaves: Pour fresh green tea leaves (such as Sencha or Bancha) directly into the wide top opening.
  3. Roast evenly: Hold the roaster by the wisteria-wrapped handle and gently shake/rotate the vessel in a circular motion over the heat. Keeping the tea leaves moving continuously ensures an even roast and prevents burning. 
  4. Monitor the Roast: Roast for a few minutes until the leaves turn a rich, toasty brown color and a warm, nutty aroma fills the room. 
  5. Pour Out: Once roasted to your preference, tilt the vessel up. The hollow handle acts as a built-in funnel, allowing you to easily pour the freshly roasted leaves straight out of the end of the handle and into your teapot.
