Jiang Mu Xiang Phoenix Dancong Oolong (Limited Time)

Dynamic, spicy, and floral- this Jiang Mu Xiang Phoenix Dancong Oolong (姜母茶) is a great choice for tea drinkers who want something that can stand on its own.

The tea greets the senses with a bold ginger aroma, balanced by a soft, sweet hint of graham crackers. The tea has a silky mouthfeel with good body. Despite the tea’s slightly dry finish, the tea travels down the throat smoothly and the lingering aftertaste is clean, herbal, and refreshing. The naturally occurring notes of ginger adds depth to the tea, while the sweetness from the tropical fruit profile and the soft gardenia notes that float at the end creates a beautifully rounded profile without becoming too overwhelming. 

This tea's boldness and vibrant complexity is attributed to the origins and specific processing of the Jiang Mu Xiang cultivar. This cultivar is produced from old tea trees, some of which are over a century old, at high altitudes, around 900 to 1000 meters, which contributes to the tea’s complex flavor. The tea has tightly rolled leaves with a dark, glossy appearance, which, when brewed, the tea takes on a bright and clear amber color. The processing of this tea involves traditional oolong techniques like sun-drying, withering, and roasting, ensuring the retention of its unique characteristics. It is also highly durable and can endure multiple infusions, which is a hallmark of high-quality Dancong teas.

We suggest brewing the Jiang Mu Xiang cultivar of Phoenix Oolong using 7 grams of tea leaves in a 60-80ml gaiwan or a Chaozhou-style teapot for an optimal Gongfu experience. Quickly brewing with more tea leaves allows is key for the tea’s layered complexity to shine through without becoming too bitter. After a rinse, the tea leaves should be brewed with 205 degrees F (96 degrees C) with a short 5 second steep time. This is only for the initial brew. After the initial brew, steep for only 1 second to avoid brewing the tea too strong.

Drinking too strong of a brew or drinking this tea on an empty stomach is not recommended due to the astringency and the specific processing for this tea. However, as an afternoon tea, this tea is a stellar and satisfying.
