Brewing Method #1:
For this puerh, we recommend brewing it Gongfu Style using a 90ml gaiwan and 204°F (96°C) water. Place a 7 grams of this tea into the gaiwan and quickly rinse the tea leaves. Then steep the tea for 5-7 seconds for the first infusion. For subsequent infusions, steep for only 3-5 seconds.
Brewing Method #2:
This time, use only 3 grams instead of 7, keeping the same size gaiwan or teapot and temperature. Steep for 40 seconds on the first infusion, then reduce the time to 10-15 seconds for the second infusion. Add about 5 seconds for each subsequent infusion. This method will yield a tea that tastes sweeter and lighter, providing a more refreshing experience.
When brewed quickly like this, it carries a layered complexity, highlighting more of the cherry wood notes rather than the richer dark chocolate notes. whereas, when brewed strongly with a longer steeping time (7-10 seconds), the initial flavor feels brighter and more herbal with a longer aftertaste that turns slightly more chocolatey without ever becoming bitter or dry. This flexibility in brewing brings out the best of Wujie’s essence and is a tea that is harder to over/understeep, making it a highly regarded choice among shou puerh connoisseurs.
