Sae Midori is one of Japan's newer cultivars that was developed in 1991 by crossing Yabukita and Asatsuyu cultivars. This version of Sae Midori hails from the beautiful Miyazaki area in southern Japan, famous for its light steamed green tea. Let me tell you, it makes some of the best ceremonial matcha out there. The balance of color, aroma, and taste is absolutely top-notch!
And speaking of aroma, get ready for a treat. Picture this: a sweet and fruity fragrance, like a fresh honeydew with hints of toasted almond. This Sae Midori sencha undergoes shading for about five days before harvest, making it naturally sweeter and more umami than most other senchas. And when you see its vibrant green color, you'll understand why it's unlike any other sencha you've ever laid your eyes on!
This deep-steam green tea not only smells fantastic, but it's also incredibly smooth to sip. And let me tell you, the lingering aftertaste is out of this world. It's incredibly sweet and refreshing, with a delightful cucumber/melon twist that will leave you craving more. Start your day with a cup of this tea, and you'll feel fresh and energized to take on anything that comes your way. If you're looking for a green tea that's easy to drink and not overly grassy, Sae Midori is the one for you.
Tea Brewing Guide: For the first infusion, prepare in a 150ml Japanese teapot. Use approximately 4g of tea leaves. Steep at 160ºF for around 60 seconds.
