Kabuse Cha, also known as "covered tea," is a type of Japanese green tea. The tea bushes are covered with special shading nets (kabuse) for about 10 days before harvest. This process reduces the amount of sunlight reaching the leaves, which increases chlorophyll production and reduces catechin, resulting in a sweeter and more umami-rich flavor profile. Kabuse Cha is known for its bright green color, rich aroma, and smooth taste.
The Soufuu (蒼風) cultivar is a relatively new and unique tea cultivar. It is known for its distinctive fragrance, which has hints of jasmine or lilac, making it stand out among other tea cultivars. The name Soufuu translates to "Blue Wind," which reflects its refreshing and aromatic qualities.
Soufuu Kabuse Cha has a unique floral aroma, more pronounced due to the Soufuu cultivar's inherent characteristics. The shading process enhances the sweetness and umami of the tea, resulting in a smooth, rich flavor profile with less bitterness. The leaves appear vibrant green from increased chlorophyll due to the shading process.

Brewing instructions:
Prepare this tea by heating 5g of tea leaves with 200ml of 190ºF (85ºC) spring water. Steep for 60 seconds for the initial infusion, followed by 30 seconds for subsequent infusions.
